| Black & Tan Tofu Chowder INGREDIENTS 2 Tbsp. oil 1 medium onion 2 carrots 3 celery stalks 2 cups Guinness 2 cups any British lager 1/2 lb. tofu, crumbled 2 tsp. salt 1/2 tsp. pepper 1/2 tsp. celery seed 2 large potatoes, peeled and cubed (about 2 cups) Chop the onion, carrots, and celery. Heat the oil in a large cooking pot. Add the onion, carrots and celery and sauté for 15 minutes. • Add both beers and stir. Add the tofu, salt, pepper, and celery seed and bring to a boil. Add the potatoes and let the chowder simmer until the potatoes are soft. Serves 8 |
| Beer "Chicken" and Dumplings INGREDIENTS For the Dumplings: 2 cups flour 1 Tbsp. baking powder 1/2 tsp. salt 1/2 stick (4 Tbsp.) margarine 3/4 cup soy milk For the Soup: 1/2 stick (4 Tbsp.) margarine 1/2 cup onion, chopped 1/2 cup celery, chopped 1/2 cup flour 1/4 tsp. celery salt 1/2 tsp. pepper 7 cups pale ale 2 medium carrots, diced 1 lb. faux chicken, cut into small pieces Combine the dry ingredients for the dumplings in a bowl. Mix the margarine with the dry mixture until crumbly. Add the soy milk, stirring until moistened. Knead the dough for 30 seconds on a well-floured surface, t hen roll to 1/8-inch thickness and cut into 1/2-inch squares. Place the margarine, onion, and celery for the soup in a large saucepan and sauté until the vegetables are soft. Add the flour, salt, and pepper to make a thick paste. Slowly mix in the beer and bring almost to a boil. Add the carrots and faux chicken Add the dumpling squares one at a time, stirring gently. Reduce the heat and simmer for 15 minutes, stirring often. Serve hot. Serves 8 |
| Beer Vegetable Stew INGREDIENTS 1 large leek stalk, finely chopped 1 large carrot, shredded 2 cups light lager 1-1/2 cups canned crushed tomatoes 1 cup yellow corn kernels 1/2 cup broccoli florets, lightly steamed 1 cup pre-cooked lentils 1 Tablespoon dried red pepper flakes Salt and pepper to taste In a stew pot, boil well-cleaned chopped leek and shredded carrot in water until tender. Drain well and add remaining ingredients. Cook until well heated. |
